The Menu

🍤 Appetizer: Mexican Shrimp & Mango Ceviche We start with a lesson in freshness. You will learn the art of “cooking” with acid by marinating fresh shrimp in lime juice. We’ll toss it with sweet mango, spicy jalapeño, red onion, and cilantro for a bright, vibrant starter served with crispy plantain chips or tostadas.

🌮 Main: Mojo Citrus Skirt Steak Tacos The star of the show! We take the classic Cuban “Mojo” marinade (sour orange, garlic, and oregano) and use it to marinate skirt steak. You’ll learn how to sear the steak properly to medium-rare, slice it against the grain, and serve it on warm corn tortillas with pickled onions.

🍚 Side: Fresh Cilantro Lime Rice We’ll teach you how to make rice that is fluffy, not sticky! We will steam long-grain rice and toss it with fresh lime juice, zest, and plenty of chopped cilantro for a bright, aromatic side that cuts through the richness of the steak.

🍮 Dessert: No-Bake Dulce de Leche Mousse Cups A luxurious finish that requires zero baking or frying! We will whip together rich dulce de leche and cream to create a light, airy mousse. You’ll assemble them in glasses with a crust of crushed Maria cookies (a Latin pantry staple) and top with a fresh raspberry or mint leaf. It looks upscale but is foolproof to make.

What To Expect: In our classes you’ll work together with other students in a fun, hands-on environment led by our professional chef instructors.

  • You will work with other students in groups of 4, sharing workstations and equipment.
  • Classes are 2 hours, unless otherwise noted above
  • Hands-on classes are limited to 12-16 students
  • You will be standing, cooking and working for most of the class
  • Please wear comfortable, closed-toe shoes and have long hair tied back
  • You will get with your meal:2 glasses of wine or water/soda
