The Coastal Table: A Persian Mediterranean Feast
Escape the everyday and join us for a vibrant, hands-on journey through the bright and bold flavors of the Mediterranean coast. In this class, we’ll master the art of “Mise en Place” as we prepare a four-course feast that balances zesty citrus, fresh garden herbs, and rustic cooking techniques. Whether you’re learning to achieve the perfect golden sear on halloumi or whisking together a traditional emulsion, you’ll leave with the confidence to host your own sun-drenched dinner party.
The Menu
- Blistered Tomato & Halloumi Skewers with Gremolata A perfect introduction to high-heat searing. We’ll thread salty halloumi cheese with cherry tomatoes, roast them until they “pop,” and finish with a zesty Italian herb-and-lemon condiment.
- Hand-Stretched Flatbreads with Garlic & Rosemary Using an adaptation of our 60-minute dough technique, students will learn to stretch, season, and bake rustic flatbreads. This is a great “hands-on” lesson in dough elasticity and heat management.
- Lemon-Herb Roasted Chicken with Crispy Smashed Potatoes The centerpiece of our feast. We’ll focus on the chicken things for full flavor and roasting potatoes that are fluffy on the inside but shatteringly crisp on the outside.
- Honey-Drizzled Greek Yogurt Panna Cotta with Toasted Pistachios A lighter, easier twist on the classic Italian dessert. We’ll use Greek yogurt for a pleasant tang and learn how to bloom gelatin to create a silky dessert.
What To Expect:Â In our classes you’ll work together with other students in a fun, hands-on environment led by our professional chef instructors.
- You will work with other students in groups of 4, sharing workstations and equipment.
- Classes are 2 hours, unless otherwise noted above
- Hands-on classes are limited to 12-16 students
- You will be standing, cooking and working for most of the class
- Please wear comfortable, closed-toe shoes and have long hair tied back
- We will serve water, soda or 2 glasses of wine with your meal.

Adjustments to recipes cannot be made during class.
