In this sweet, hands-on masterclass, you will learn the exact pastry physics, structural geometry, and hidden techniques required to recreate these iconic café bakes at home. We will strip away the mystery of temperamental batters and unstable creams, replacing them with foolproof methods that ensure kitchen-classroom success.

What You’ll Learn & Bake:

  • The Tokyo Café Favorite: Matcha & Vanilla Marble Pound Cake
    • The Culinary Skill: Master the architecture of a perfect creamed-butter foundation and protein emulsification.
    • The Secret: To prevent a muddy green mess, we make a single base batter, split it, and use a precise “figure-8” knife swirl. Slicing it open reveals a completely unique, dramatic marbling design for every student.
  • Fluffy Japanese Fruit Sandwiches (Fruit Sando)
    • The Culinary Skill: Learn the chemistry of cream stabilization and cross-sectional food geometry.
    • The Secret: You will whip up an ultra-stiff, structural vanilla bean cream using an ice-bath technique. Then, you’ll arrange whole fresh strawberries, kiwi, and mango using specific diagonal alignment so that a single, sharp knife stroke reveals a stunning, hidden floral “tulip” pattern.
  • Towering Japanese Soufflé Pancakes
    • The Culinary Skill: Master an ultra-stable French meringue, gentle folding physics, and stovetop steam-baking.

What To Expect: In our classes you’ll work together with other students in a fun, hands-on environment led by our professional chef instructors.

  • Hands-on classes are limited to 12-16 students
  • You will be standing, cooking and working for most of the class
  • Please wear comfortable, closed-toe shoes and have long hair tied back
  • We will serve water, coffee
